    Time for some real talk: It's damn difficult to mess up a poolside bar in Miami. You're beside a pool. There's a bar. You purchase cocktails, dip your feet into the water, and basically live the American dream as you sip your way to the bottom. How hard can this be, people? Yet an astonishing number of Miami hotels have conspired to ruin this simplest of good things with eye-poppingly overpriced drinks, shoddy service, and pools that are either inaccessibly hip or packed to the gills with sunburned out-of-towners. So props to Hyde Beach for getting it so right. Inside, the bar is decked out like a '70s Brady Bunch rec room, but outside there's 8,000 square feet of pool and beach fun. There are pitchers of mango mojitos ($80) and cucumber watermelon margaritas ($18), or for true backyard ballers, bottles of Moët & Chandon Ice ($475) and vases of sangria made tableside ($200).

    You won't find Ama easily. The speakeasy inside Brad Kilgore's Kaido is so secretive the room is virtually impossible to find without a guide. Once checked in, you're led to a secret double passageway that finally leads to Ama, where you're asked to refrain from taking photos and using social media in the bar. Once inside, you'll find a good selection of Japanese whisky, including rare vintages from decades past, along with a full food and drink menu. Perhaps the most surprising twist is Kaido's take on a pickleback. The drink, usually downed in Brooklyn dive bars as a precursor to a long night of imbibing cheap beer and booze, consists of a shot of whiskey followed by a shot of pickle juice. Here, guests chase Japanese whisky with chilled shiitake broth, which is richer and more complex than a glass of brine, imbuing the shot with an exotic flair.

Reminiscent of a social club of yesteryear, with comfy and kitschy Americana-inspired décor, AmSo feels like the type of place the boys would go to see a boxing match and the ladies interested in meeting a Navy man on leave would hang out.
